I'm making a sponge cake later and as I haven't made one for years I forgot the best recipe. Anyone got any tried and tested recipes for a basic Viccy sponge ??

err how much sugar and flour? And that much butter?? Is this for a giant cake??

No worries.

Remember not to open the oven for at least 20 minutes, sponge should be firm, though not hard, and a skewer should come out clean. Oh, oven 180c fan

Lol it does feed a few.

Sugar, butter and flour same amounts.

To reduce quantity, divide flower etc by 6 then multiply by 4 should do it

It works out about 56-60 grams of flour, butter, sugar each to one egg. You can then adjust size anytime remembering this

It is thereabouts. But as basic rule, 55-60g per egg.

Yeah it is really. The same amounts of butter flour and sugar then half the amount of eggs. But 100g and 2 eggs would need very small cake tins lol x

200g unsalted butter, softened, plus extra for greasing

200g caster sugar

1 tsp vanilla extract

4 medium eggs

200g self-raising flour, plus extra for dusting

about 6 tbsp raspberry jam

250ml double cream, whipped

icing sugar, for dusting
