One is that most people store them in the fridge door, which is the worst place as they are subjected to temperature change every time the door is opened and closed, if you're going to keep them in the fridge, put them at the back where the temperature is much more constant. (Same goes for milk) Another reason is when cooking straight from the fridge the yolk is more likely to break due to the bigger temperature difference and also may not be cooked to a high enough temperature thus posing a salmonella risk. | |||
