) and as I'm bored, I'm going to make some today!

A serious answer...

6oz SR flour, 2 eggs, splash of milk, 4oz caster sugar and 4oz margarine. Whizz altogether in a food processor (no faffing about here) - will make about 10 in muffin size cases. Bake for 25 mins at 180C. Munch

Weigh you're eggs, 2 for cupcakes will do (good sized!) then make you're flour, sugar and butter the same weight. Never fails. You can also do very nice lemon drizzle cupcakes. If you want the recipe ill send it. X

I made cornbread yesterday and I suppose you could probably make them like cupcakes for individual servings if you're interested. Delicious buttery corn flavoured cross between bread and cake that makes a great scone and cupcake alternative.
