You could always use the chip shop near me, they have monkfish, john dory, halibut, lemon sole, plaice, butter fish etc. etc.

Why cook it when they will do it for you, you can even eat it there and it has a licensed restaurant as well.

Have you considered fresh tuna............... its just soooooooooooooooo different to the canned stuff. Any fresh Tuna dishes are just fabulous plus it's full of those healthy fish oils.

Salmon en croute is good if it is cooked nicely.

Or maybe give it a nice breadcrumb and herb crust, then serve it with new potatoes and a crisy salad.

For me there is no other way to cook salmon but by the simplets methods.

Steaming , grilling or baking - doesn't matter which .... just don't use ANYTHING else with it except butter and a little black pepper.

Doing anything else with salmon is bastardisation. It's a delicious fish.

If you want a carb try potatoes lyonnaisse or similar. Thinly slice pour a little boullion over them and oven them till soft like the slices on a hot pot.

I like salmon with fresh or frozen buttered peas and a fresh fried or baked tomatoe. Hate it messed with. Asparagus is cheap now ( got to be fresh ) or broccoli .... other than that .....NOTHING

Here is my favourite Salmon recipe, will work for other fish such as tuna or swordfish too! Sort of Chinese/Japanese.

Make marinade by mixing Murin with soya sauce and some chopped garlic and ginger (make extra for later use).

Marinade a salmon fillet with skin side down for about 30min or longer.

Pan fry a salmon, skin side down first until crispy, turn over and fry the other side.

Keep warm while you make the sauce, by frying some garlic and ginger, then add the marinade to the pan, and reduce to a syrupy consistent.

Add loads of chopped spring onions, heat through.

Serve the sauce with the salmon, excellent with boiled rice and stir-fried vegetable!

Chester

I cook my Salmon in the oven..

I marinade in dark soy sauce and spring onions, leave in the fridge for as long as you like, then cook in the oven covered in foil

OR

Smoother the Salmon in ginger puree, grind some dry chilli and garlic,(you can buy a shaker from Iceland only 99p)over the ginger and again leave in the fridge for as long as you like, cook in the oven in foil for 25mins

Serve with what ever you like..Enjoy
