Me too kind of...

There's this old school black american woman that does videos on Youtube to show what her mother and grandmother taught her to cook when they were piss poor. It's all bloody amazing though.

I try to find recipes and instructions as genuine as they come. Also have a few ladyfriends over there that like to help me with my Soul Food, Mexican and Italian recipes when I want to update my skills.

What I dont understand is that there is so much good cooking in Mexican tradition and you'll never see it or read about it in this country.

Chilli, Tacos, Nachos, frozen Fajitas and Burritos, thats about it. But they have so many good soups and slow roast pork recipes

Ham in ? Really? lol no but nacho soup is amaaaayyzing. I heard the other day that if you put a steak in coca cola for three days it will totally dissolve so maybe its a tenderising process. More of a rock salt dry ageing fan myself lol

I'll have to look that up. I've been perfecting my ultimate pizza (my own dough and sauce and herbs), fried chicken and Southern Mac n Cheese lately. Time soon for the annual smoking BBQ. I get a gang around and get them to chuck a tenner in for all the smoked ribs, chicken, pork loin, sausage and bbq beef they can eat. I literally put them in a coma with all that spice and brown sugar

You can get it in supermarkets but they stock selectively and its not a demanded product. Try asking your nearest independent/mini markets or if you have an international food market or chinese market, you might be luckier there.

Otherwise, stick with regular egg and milk for the wash and try brining beforehand, that gets amazing results too

No you need vinegar for that...it adds flavour to the chicken

I understand that KFC uses MSG accent salt in their food so I'm under the impression that's what they brine with possibly, but I use liquid seasoning in the egg wash and that really tops off the flavour between brining and battering
