Hmmm... now there's a dilemma as I love all the main three meats.

A top cut of Silverside probably gets my vote though as it's just to die for when it first comes out of the oven.

A meal in a carvery restaurant should sort that out for you.

Thinking about that, I`ve never been to a carvery that serves lamb but they always have mint sauce. Eh?

My favourite "meat" is always duck.

However, I like all meat except offals except smooth live pate or pan-fried fois gras with caramelised fruit!

Beef: Rare roast or steak, or satay on the BBQ, mince as in chilli, pies, and meat sauces for pasta

Chicken: Roast, or BBQ with one of my fab marinades

Lamb: Roast with rosemary and garlic, BBQ ribs with a spice rub, or kebabs with meat marinated in a minty garlicky yhogurt marinade, and curries

Pork: Roast belly, with a 5 spices rub, the Chinese way, or a sweet and sour stew

Duck: Roast, confit, pan fried breast, rillett, etc. etc. etc...

Now I am hungry, breakfast time!

Forgot to add, for pork, I love BBQ ribs and boneless belly slices, or boneless shoulder steaks, smothered in my yummy BBQ sauce!

When you do, chop off the legs first so that it cannot run away. Apparently that's what peeps in the army are taught, true or false I don't know!

The trick at a carvery is.........If your favorite is beef,then you say to the carver "Oh,just the beef please".

Chances are he'll give you an extra slice or two as thats all your having,then you say "Oh go on then,I'll have the lamb and pork too".

Venison is quite expensive. I like to make satay out of them, marinated in a sweet alcoholic marinade to make it tender. It is too lean for my liking most of the time though.

I also like goose. However, a goose is way to big for me on my own nowadays.

The main course of the great meals I had in France was at Jonathan Meades' (ex Times's restaurant critic) favourite restaurant in Bordeaux, consisted of a goose leg confit with chips fried in goose fat. Heaven on a plate!!!

Venison is quite expensive. I like to make satay out of them, marinated in a sweet alcoholic marinade to make it tender. It is too lean for my liking most of the time though.
