Onions..peppers...chillies....swiss chard...swede...leeks...greens...sprout tops...celery...cauliflower...feeling hungry now!!!

That's a favourite of mine too. Use all of the cauliflower not just the white 'florets'. Delicious as a meal on it's own..

Broad beans are lovely. I had a very nice pea, broad bean and dandelion leaf risotto at the weekend.

I am sorry for being pedantic but a potato is not a vegetable. It is a tuberous root. That is why in cookery books vegetable and potato dishes have their own catagory.
