"Railway Chicken What's this?" It's based on street food, spicey gravy with chicken onions, peppers, potatoes and green chilies. It may not be a common dish but some Indian Restaurants and takeaways do as a Chefs special.

"This is a dish which is famous in Gujarati Muslim Indian circles… called Naan Gosht - literally means bread and meat… the smell is heavy of spices and the meat is lamb… however, it is very rich and with the oil content - it is a cardiac arrest on a plate. BUT it tastes absolutely divine… typically served on special occasions like a wedding or celebrations. If ever you get a chance to eat it.. do so… " Just googled it and OMG it looks awesome

"Nobody outside of Birmingham seems to know about katlama, a spicy takeaway speciality. I can't understand why it is so localised." I wouldn't call it a curry; it's more of a stuffed/folded bread. Keema naan is similar but Katlama uses a different dough to a naan bread - it's more like a spiced chapatti "calzoni" if that makes sense.

"It's interesting that most of the Indian cuisine we know now, uses ingredients that weren't native to India or even Asia or Europe, chilies, bell peppers, tomatoes, potatoes etc came from Central and South America and were brought over by Europeans, also the Indians grow and eat an awful lot of Cauliflower, introduced by the British. When people say they are having Indian, none of it actually could be classed as traditional Indian cuisine. Food for thought." That is typical of so much cuisine from anywhere that's been on a major trading routes and/or part of a big empires. A lot of Indian dishes we enjoy have a Persian influence too. The worlds actually been a far smaller place for much longer than we give it credit for (at least for the wealthy and powerful).

Quite, but Eurasian trade routes were established 1000s of years ago, it's one big land mass there was no need to cross vast oceans.
