My favourite belly pork recipe, for about a kg of meat:

Dice the pork (skin on) into 1in/2.5cm chunks and place in a shallow pot.

Cover with water.

Add 4 tables-spoonful of sugar and equal amount of malt vinegar.

Add a dash of light soya sauce.

Add a piece of ginger and a couple of cloves of garlic.

Bring the pot to fast boil, then turn down the heat and simmer until most of the water has evaporated, and the remaining fluid syrupy.

Finely chop some garlic and ginger, and fry gently before adding it to the pot.

Finely chop some spring onion and add to the pot.

Add a dash of toasted sesame oil, and some toasted sesame seeds to the pot, and mix well.

Serve with plain boiled rice, and stir-fried vegetables.
