In homage to the Fabulous MobileBottom and his great foodie threads...

Friends are coming for Sunday lunch. What are you cooking them? Will it be a traditional roast & all the trimmings? Or something lighter to suit the weather & time of year?

I currently have a big juicy bird roasting in the oven with garlic and thyme. It's a warm day, so I'm not doing a traditional roast. Instead I'll serve it with Mediterranean Roasted Veg (very tasty cold) and crushed new potatoes.

Tomorrow, I'll blitz leftover veg into a sauce with tomatoes; then layer aubergine slices, leftover roast chicken, Feta cheese sauce and lasagna sheets. I rarely eat red meat, so this is my version of traditional Italian lasagna, with a Greek twist. Happy Bank Hol Sunday all 😁☀️

Carlisle usually

Today I woke up early and decided I was making beef and red wine stew. I just need to pick up some good crusty bread later and I'm all set.

However, half asleep me managed to burn my favourite wanking finger. So it better be a really good stew 💜

I’m doing chicken in a lemon and tarragon sauce with griddled asparagus and Hassleback potatoes today

Off strawberry picking too, so there will probably be an Eton mess before I turn the rest of the strawberries into jam tomorrow

That is undeserved praise but thank you. Both your dishes sound wonderful. Maybe a light feta and rocket salad with some balsamic glaze as a little starter before the Sunday roast and just a bit of plain fruit like watermelon for after will be good but fine just as it is. Wonderful.

Eva, yours sounds equally delicious 😋 Lemon and tarragon is a perfect pairing...great on salmon too. And Hasslebacks are a 'hassle' to prepare but so tasty once cooked. Love how you also use your leftovers to create even more deliciousness. Have you ever made a sugar-free jam? I'm currently looking for a recipe.

Totally deserved MB...love your foodie threads. You inspired me to enter your dinner menu competition last year (on my old profile) and very bizarrely won 🤔

Your starter sounds delicious...all regular ingredients in my kitchen. I'm about to try out a new recipe using balsamic vinegar, to make a tangy pomegranate dressing that I recently discovered on a shop bought meal. Fingers crossed it'll be just as good 😁

I'm lucky to be going to friend's today. They're doing Sunday lunch, I've been promised roast beef.

For dessert, I've made a large sticky toffee pudding, which we'll have with ice cream.

Have a search for sugar free jam homesteaders of America. There are some good tips there. I have made one once, but I’ll be honest I didn’t like the texture… it didn’t feel jammy enough. Just be aware if it’s using artificial sweeteners then they tend to have a fairly active effect coming out the other end. Like a fruity colon cleanse 🤣

🤣 fruity indeed, but not in a good way 🤣 When you have to stop eating sugar and they suggest sweeteners instead, they never tell you about the side effects 😬

Excellent and again, thanks. And your win was well deserved. By the way, I now use the balsamic glaze more than the vinegar as find it richer and great on it's own or with other ingredients like the pomegranate without overpowering them but is inherently sweeter of course.
