Honestly too hard to pick just one!! Depends on how I'm eating it and what my mood is. A mature cheddar is versatile, I love a salty tangy feta, smooth goats cheese is delicious, melty creamy brie/camembert is yummy. I just can't pick one.

Soft spot for extra mature cheddar, I like all cheese tbh especially those with strong flavours, excluding blue cheese. Even I can't eat that.

Love cheese with pickled onions in it, feta and halloumi are awesome.

I find mozzarella bland a light cheeses lacking in substance.
