I am a bit fussy with my pillows. I have been known to try a hotel pillows, and if I don't like them, I will find a Benson Beds or similar furniture store in a retail park and buy my own pillows for the night. Which is why I do have about 12-14 pillows at home. Obviously not on the bed, but in storage. Sometimes I get fed up with the ones on the bed, and then I can rotate them our for the ones in the storage.

I think it's because I don't have a fixed sleeping style. Some nights I'll sleep face down, other's face up, some on my left side and others on my right side. So my neck is always changing positions and thus needs different support levels and firmnesses. Hence on the bed I will have 3 pillows. Very soft, medium, firm. And I do chop and change during the night too.
