Finely dice an onion and fry gently in the bottom of a cast iron casserole dish, set it aside once translucent.

Add a kilo of diced beef to the casserole a few chunks at a time, fry until browned (a little bit over-browned is best), then add the beef to the onions.

Once all the beef is browned lift all the burned bits off the bottom of the casserole with some redcurrant jelly and two pints of dark beer (ideally Belgian beer!).

Bring that to a boil, boil until all the burned bits are lifted, then add the beef and onions with a bouquet garni and some cloves.

Once everything has come back to the boil lower it to a gentle simmer.

Spread two slices of brown bread with hot mustard and put them on top of the stew, mustard side down.

Leave the stew simmering, uncovered except for the bread. Stir it every half hour. The bread will fall apart and vanish (honest).

After an hour and a half take out the bouquet garni and any cloves you can see, put a lid on the pot and simmer for another 20 minutes or so. Add water if needed at this point.

Add a splash of red wine vinegar, stir and serve.

Keeps really well and tastes better the next day.
