Pork sausages and chopped hot peperami sprinkled in paprika and sizzled in butter ghee. Then drizzled in Jack Daniels Bbq sauce and slow cooked for an hour. Served over a bed of rice, thickly sliced red onion and yellow peppers with kidney beans... Who wants some?

Sounds like a Tex-Mex take on Dublin Coddle. I would substitute the pepperami for chorizo and perhaps crushed tomato instead of BBQ sauce.

Couldn't get chorizo, so pemarami it had to be. To late to substitute crushed toms. It's simmering away as I type. Try it next time.
