Fajitas are always are nice meal that’s got a bit of zing if you want it, plus is pretty light so doesn’t bloat you out 👍🏽

I like to make a sweet chilli salmon and creamed spinach.. I brown my salmon in truffle butter (I stock up at Christmas as this seems to be the only time it's available easily). Brown crispy skin side down. I add diced green onions, a few chilli flakes and sweet chilli sauce and a drop of surachi and just coat the green onions in that and put the salmon back in and flip..don't cover or you'll loose the crisp.

Separate pan I put butter and spinach and about 3/4 container cream cheese depending on how much spinach dissapears. Add 1 clove crushed garlic and a pinch of smoked salt.

It doesn't take longer than really 15/20 min to make and I love it.
