"I make bread for a living, instead of reducing the water keep adding tiny amounts of flour, if you add to much it will dry out, if you're making it by hand that is, I've made onion bread before, I added a few onions, kneaded it in, then added a few more, until there was enough onions in dough." I know myself well enough to know that I wouldn't do it by hand. I have done in the past but I need to make bread two or three times a week and I'd end up buying the horrible shop stuff . Thanks for the tip, I reckon I could keep do that with the bread maker by carefully adding flour while it was mixing and kneading | |||

"I don’t use a bread maker but string White or 50-50 flour when I need a good workout and then I just use Water, yeast or sourdough and salt normally. I have substituted the water for pale ale the odd time ! I also sometimes put a baking tray full of water at the bottom of the oven" I might try the water tray when I'm cooking the rolls | |||
