Thick would be great if I could cook them. I saw someone buying huge rumps ( over 1kg) at least 30mm thick recently, seemed too thick to cook to me. About half that thickness is all I can work out how to cook

Always at room temp

Pat dry then massage raps seed oil ( a high temp oil not olive oil)

Salt and pepper

Small qty of oil in a ribbed pan max heat

See the oil smoke then in you go

4/7 mins. A side but always rest for 5/10 mins

(Don’t bugger about with it in the pan )

This ought to be rare / med rare according to the thickness of the steak

Apply your source of preference ! adding the goodness from the pan

Too much red meat is not good for you or the environment long term !

Only a suggestion. Have a fire extinguisher / blanket handy too !

I just wish I could actually eat the damned stuff! We have a delicious seasoning mix recipe with an onion salad, to go with steak and it's something I'm really good at cooking. Sad times on my soupy diet

Isn’t it a bit of a meth about olive oil? extra virgin olive oil smokes at 230 -250 So should be fine I use olive oil & extra virgin olive oul for just about everything except cakes.

Generally Medium Rare with a good sear. Although have had some cuts that are marinated or cooked slow and low that are closer to medium but much more intense with flavour. Personally I think rare is overrated and often ordered to look caveman! Steak Tatare is stunning but a lot of work goes into giving uncooked steak flavour with capers etc.

If I’m cooking it myself it will be seared on the outside and still mooing in the middle, plus I make my own version of peppercorn sauce which is more like caramel pepper and cream which just works so good

Depends on the cut, if it’s a fattier cut like rib eye you’re not getting the full flavour as the fat hasn’t rendered if you go less than medium. Rump I like rare as it’s one of the tastier and more overlooked cuts, fillet can be blue but whilst tender is pretty tasteless. Sirloin is boring and difficult to get a really good one, at the end of the day though, have it how you like it

Used to want well done, but in the last couple of years steaks started being served pretty much charcoaled, so I have backed off the cooking time to medium-rare. The outside gets properly cooked and the inside is no longer a really bright pink.
