My trick for moist sponge whatever the recipe is to add one extra (small) egg than called for in the recipe, then bake for 5-10mins longer that recipe says, checking at recommended baking time to see if knife comes out clean, then at 5 extra mins and then at 10. It's rare I need to go to ten extra mins when checking

Flat caps: not a fan of Jaffa cakes or Terrys choc orange either then?

Mint choc cheesecake does sound like a great idea though, might do that next time ..

Borrowed from archive

Lemon Almond Butter cake

'

1/2 jar lemon curd

130g butter (softened)

1 cup caster sugar

1 cup plain flour

1 tsp baking soda

1/2 tsp salt

3 medium eggs

1/2 cup ground almonds

1/3 cup flaked almonds

- Preheat oven to 180c

- Grease & flour an 8" springform tin

- Beat the butter & sugar together til light and fluffy

- Sift together the flour, baking powder and salt, then stir into the butter mixture

- Beat the eggs til they begin to foam, and add to the mix along with the ground almonds. Beat til combined.

- Transfer the batter to the tin. Drop dessert-spoonfuls of lemon curd on top of the batter, spacing them evenly (keep them away from the sides of the tin)

- Sprinkle the flaked almonds on top and sprinkle 1tbsp granulated sugar on top.

- Bake for 40 mins

"Borrowed from archive

Lemon Almond Butter cake

'

1/2 jar lemon curd

130g butter (softened)

1 cup caster sugar

1 cup plain flour

1 tsp baking soda

1/2 tsp salt

3 medium eggs

1/2 cup ground almonds

1/3 cup flaked almonds

- Preheat oven to 180c

- Grease & flour an 8" springform tin

- Beat the butter & sugar together til light and fluffy

- Sift together the flour, baking powder and salt, then stir into the butter mixture

- Beat the eggs til they begin to foam, and add to the mix along with the ground almonds. Beat til combined.

- Transfer the batter to the tin. Drop dessert-spoonfuls of lemon curd on top of the batter, spacing them evenly (keep them away from the sides of the tin)

- Sprinkle the flaked almonds on top and sprinkle 1tbsp granulated sugar on top.

- Bake for 40 mins

- Serve warm with whipped cream '

You can use sugar substitute like canderel but the cakes tend to be dense ,unless you really beat the butter/ marg and canderel till it doubles in size.

Biscoff Cheesecake

For the base:-

200g biscoff (caramelized) biscuits 50g ginger nuts

100g u/s butter (melted)

Wizz the biscuits in a food processor until they are finely ground, then add the butter and pulse a few more times to combine.

Tip into an 8" springform tin and press into a firm smooth base with the back of a spoon. Chill in the fridge for about 90mins.

The Filling:-

500g Cream cheese

100g Icing sugar

300ml Double cream

1 tap Vanilla extract

100g Smooth Biscoff spread

Beat the cream cheese and icing sugar with an electric whisk untill smooth, the beat in the cream and vanilla until it is thick and holds it's shape.

Add half the cream cheese mixture to the chilled base and smooth flat, then with a teaspoon add small blobs of biscoff spread evenly across the cake. Then add the remaining cream cheese mixture, covering the blobs of biscoff spread and spread into a smooth finish.

Chill in the fridge for at least 6hrs

To decorate:-

50g biscoff spread

50g biscoff biscuits (roughly crushed)

Carefully melt the biscoff spread either over a pan of simmering water or in short bursts in the microwave.

Drizzle artfully over the cheesecake once you've taken it out of the tin and then top with the remaining biscuits.

Have made Coconut and Raspberry Loaf cakes in the past with no problems.

'Lemon and Blueberry Cake

Ingredients

125g butter

125g caster sugar

3 medium free-range eggs

175g self-raising flour, plus

1tbsp extra

zest of 1 lemon

100g blueberries

1tsp blueberry conserve

lemon juice, optional

sugared edible flowers (or blueberries), to decorate

Heat oven to 170C/gas 3. Grease and double line a 2lb loaf tin with baking paper. In a large bowl, whisk together the butter, sugar, eggs, 175g flour and zest for 3-4 mins until light. Toss the blueberries in the extra 1tbsp flour, then fold in. Spoon into the tin, smooth the surface and bake, covered with a sheet of foil, for 40 mins. Uncover and cook for a further 10-20 mins until golden and springy to the touch.

Meanwhile, gently heat the sugar and lemon juice until dissolved, bring to a boil and boil for 2 mins. Set aside.

Spoon the syrup over the cake as soon as it comes out of the oven, and leave to cool for 30 mins. Remove from the tin and leave to cool completely.

Sift the icing sugar into a bowl, then press the conserve through the sieve and take it off the underside. Stir to combine, adding a little water (or lemon juice), a few drops at a time, until you have a just-runny consistency. Drizzle over the cake, leave to set for a few mins and decorate with the sugared flowers'

Another one borrowed from a previous thread and served with as much cream as you like

'Carrot & walnut cake

Ingredients

For the carrot cake

450ml vegetable oil

400g plain flour

2 tsp bicarbonate of soda

550g sugar

5 eggs

½ tsp salt

2½ tsp ground cinnamon

525g carrots, grated (also finely shread a wee bit of carrot for decoration)

150g walnuts, chopped (keep afew of the bigger bits for decoration).

For the icing

200g cream cheese

150g caster sugar

100g butter, softened

Method

For the carrot cake,

Preheat the oven to 180C (160C fan) Grease and line a 10in springform cake tin.

Mix all of the ingredients for the carrot cake, except the carrots and walnuts, together in a bowl until well combined. Stir in the carrots and walnuts.

Transfer mixture into the cake tin and level, then bake for 1 hour 20 minutes, or until a skewer placed into the middle comes out clean.

Let the cool for 10 minutes, then remove the cake from the tin and set aside to cool completely.

For the icing,

Beat the cream cheese, caster sugar and butter together in a bowl until fluffy.

To decorate,

Spread the icing over the top of the cake with a palette knife, use the few shredded carrots & bigger pieces of walnuts'

A chap who used to work at my current company always used to bring one in whenever there was a bakesale (sorry for the Americanism) and it was always one of the first to be nabbed.

I baked it once and made it gluten free too (extra faff, lol) cos we had so navy allergies in the team at one point.

My husband is a pretty decent baker, and will successfully try his hand at anything. One which he hated making was an Angel Food Cake, as it was a "boring" process, and far too much waste when there isn't much to do with the 10 egg yolks you have to discard in the making of it.

He made the mistake of producing a pumpkin cake one Halloween, and now a friend pesters him to make one every year! Normally, I wouldn't go anywhere near it, but it was absolutely sodding delicious, with the best frosting.

I had my birthday not long ago, and instead of the expected cake, he made be one of my favourites - the humble Pineapple Upside-Down cake, with some candles stuck in it. Lovely!!!!

Thank god he's humble about it, usually saying: "Once you've spend all the time baking it, you can't be arsed to eat it once it's finished".

I am fully aware they don't go well together.

Both custard and curd can be kept for at least a week in the fridge.

Might give them a go in the cooler weather. Did the silly thing of making a treacle tart earlier, and even though it was served with double-cream, this hot weather really makes it a tough old eat.
