Make a thick sauce with the most of butter (reserve a little), milk and cheese (hope you have some flour) meanwhile toast one side of the bread. Spread untoasted side with butter and mustard (reserve a little mustard) Pour sauce on untoasted side, place ham on top, poach two of the eggs and place these on the ham.

Chop onions, cornichon cooked broccoli and cucumber finely, make dressing with mustard and whatever else you have to hand.

One egg left for tomorrow

The onion and broccoli could become a pretty decent soup, made “cream of” with a dollop of the Philly.

And/or hard boil and slice an egg or 2 and use them with the ham, cornichons and mustard for a slightly bastardised New York Deli sandwich.

Place the broccoli and a small piece of onion into a bag and microwave. Add 170 mls of water along with some butter and mustard. Heat in a pan with half a veg strock cube and then jujj in the ninja. ( Soup )

Soak the two pieces of bread in the beaten egg and season. Fry both sides in a little butter so you have lightly toasted eggy bread. Remove from the pan and put on the ham and cream cheese and return to the pan to warm through or become golden.

Chop the cucumber and cornichons. Mix together and season. Add a little chilli sauce or similar to make a light liquid dip/sauce.

Eat your soup - have your fried sandwich on a plate with the cornichon dip ......

Mind you one of life's great pleasures is a just warm boiled egg sandwich with loads of butter, tomato and a drop of salad cream.

Tonypandy.

Finely chop some onion and cornichons, mix with some Philly and mustard. Use this with ham and bread to make a sandwich. Seal the edges, dip in beaten egg and fry on both sides.

Chop rest of onion, broccoli, cucumber, add some water, mustard, salt and pepper. Boil until veg is soft. Blitz, add Philly.

Posh soup and sarnie.

Others said similar things but you made the execution sound really easy. Thank you.
