I tend to deglaze the pan with red wine, chuck in some seasoning (fresh herbs if they’re in season), add a bit of butter, and that’s a pretty decent sauce right there.

My favourite ever was Peter Luger’s steak sauce in New York. Rich, sweet, bbq/style sauce

More recently, I had a dish that was cubed fillet steak with pomegranate molasses … amazing
