Derby

I like Danish Havarti, Sage Derby, and smoked Cheddar (like Applewoods).

However, to go really exotic, I had a limited edition Irn Bru cheddar from The Great British Cheese Company a couple of years ago, and it was a surprisingly tasty (albeit slightly odd) combo that seemed to work!

Well not easy to pick one or two as like most. Generally like hard cheeses like comte, gruyere, kefalotyri, manchego etc. But also love a good brie, gongonzola, blue cheese and of course feta
