I think rope would be if I learned more nots but atm it's restraints. Any ideas the best way to learn nots ?

Get a spell checker first. It's "knots" not "nots". Then get inexpensive rope and a sailor's knots book on Amazon. Learn knots that do not tie themselves tighter when the person you are tying moves, because you do not want to . Get a pair of bandage scissors for cutting thinner rope when the person you are tying freaks out and needs to be freed asap. Also learn how to quickly untie knots. Practice on a chair first, then go to shibari workshops. It will take a long time to learn.

I started by just buying a length of rope and watching YouTube tutorials, practicing on myself or a pillow. There are books you can buy too. The best thing is a class though

Currently going down the shibari route myself but I’ve a lot more experience with restraints.

Rope is far more versatile but if you’ve a place to mount the fixings you can do wonders with a few eye plates, some inexpensive chain (and a pair of bolt cutters to cut it to size and a reasonable set of cuffs

Can also be tricky trying to cut knots/rope in an emergency but with restraints you just undo the buckle

As we also sail and live on a boat ropes become second nature. We do have a way of getting ropes off quicker than fiddling with buckles if there was an emergency.

Ropes can be a lot of fun

Self tie on a sub is good, although needs to be a longer term thing as it requires a very strong desire to please.
