So. Just attempted a cheesecake, a non bake one, despite the title of this thread. Anyway ive been quite into making cakes lately and am getting bored of chocolate fudge cake, fairy cakes and victoria sponge. So who's got any easy, yummy cake recipes

browneyedbaker.com has some fantastic recipes not always just simple but the ones I've made are fantastic! If I could bake cupcakes for a living, I would!

I'd love to bake nice bread although am considering cutting out carbs so maybe not the best idea lol

I do have an amazeballs baked cheesecake recipe but will have to mail it to you in a few days cos Im away from my recipe books for a few days - the original was white choc with a mocha swirl but i make it white choc and milk choc chip.

It's incredibly quick to mix up too.

The only downside is that it makes a ten incher - so quite large.

Absolutely no responsibility accepted for any harm the following recipe may cause, I make it about once every 2 years and still the calories are too high

Bottom

1 pack Digestive Biscuits

Butter

Middle:

11g Gelatine

1 pack Digestive Biscuits

Butter

250g Crème Fresh

250g Cottage Cheese

150ml Bailies

150g whipping cream

2 eggs

140g castor sugar

Top:

Strawberries

Dark chocolate

Whipped cream

Make it!

• Measure 5 tbsp cold water in a small bowl, then sprinkle over the gelatine and leave to soak for 5 mins until spongy. Now stand the bowl of gelatine in a pan of gently simmering water and leave until it turns clear.

• Make The Base, mix the biscuit crumbs and butter really well, Press into suitable container and bung in fridge.

• Beat up the Bailies cheese and crème fresh stir in the gelatine and lightly whipped cream

• Beat the eggs whites and sugar into a meringue and stir that in gently.

• Let it set in the fridge about 3 hours

• Whip cream and thinly sliced strawberries to make the top... some liquidised strawberries with a bit of gelatine can also be used on top but put that on gently before letting it all set together.

This one is so simple even a man can make it, I'm testament

white Chocolate cheesecake

Half a pack 225gm digestive biscuits (half a normal pack)

50gm (70gm for a less crumbly base)

Crush the biscuits melt the butter mix and put into a 8” round buttered tin, pop into the fridge for an hour or 15 min in the freezer to set

300gm of full fat philodelphia

200gm Framage frais or Mascapone

200gm white chocolate

Melt the chocolate over a pan of boiling water

Whisk the philly and mascarpone together add the melted chocolate quick whisk and pour over the base

To make it a little more interesting melt aprox 20-30gm of dark chocolate, add half the full mix to the base, drizzle in half the dark chocolate and swirl with a spoon handle, add the rest of the mix and then the rest of the dark chocolate and repeat with the spoon handle

Or get 225gm of strawberries, chop aprox 200gm and add to the mix, slice the remaining strawberries to decorate the top or both
