Cooking repertoire

London

I’m currently trying to improve and increase my cooking repertoire. Selecting a few new dishes I’ve never done before and having a go at them each week. It’s fun and really satisfying.

Have you got a new dish you’d like to try making or do you tend to do the same reliables. Are you an adventurous cook?

This afternoon I’m going to attempt a baked yoghurt cake.

I often go for a selection of reliables. But I do branch out sometimes.

I started getting Oddbox deliveries last year, and going "what the fuck is that and what the fuck do I do with it" has been enjoyable

I'm a chef by trade so there's far too many things I know how to cook!

Someone asked me if I was to cook for them what would I cook and I realised I’m not sure what my proud of signature dish would be and so I’m hunting to secure one! It’s an adventure!

I’m obsessing about cooking posts on instagram, it’s very sad!

haha!

I'm not sure what my "signature" would be, I don't feel like I'm a good enough cook for that malarkey.

I'm sort of much more... I got a butternut squash in my latest box. I don't like soup and I don't want a roast. What am I doing? ... some googling later... probably a curry. haha

I'm a lazy cook, if I'm just cooking for myself (the majority of time) then I default to a Bolognese, chilli, a jacket potato, pork chop (old school) or fish (Aldi salt and pepper Basa). Occasionally do a roast dinner or something fancy if I have guests.

I fall back on routine and a few tried and true dishes both out of convenience and perhaps some laziness.

Living on an island with so many amazing restaurants that produce food far better than I could hope myself doesn't help

I tried a new one it was a creamy, cheesy chicken sauce with spinach, onions and mushrooms and gnocchi. It was really nice.

I tend to cater for the kids so it's generally not too adventurous.

Cooking is my thing!

There are recipes everywhere and I enjoy trying to replicate dishes from different cuisines that I've tried when eating out or stuff from cookery programmes.

Yep cooking for one is a balancing act - I’m currently batching up my other portions.

I definitely need to improve my fish skills!

It’s sausages. Fried and cut up, onions, smoked paprika, bbq sauce and 2 tins baked beans. Mash potato on top (like cottage pie) with cheese grated on top. It was lovely!

I ‘dad cook’ and can throw things in to mix it up.

Probably could cook properly for a woman but after the week I normally have, I’d be saying, nah, let’s go to a restaurant.

My signature dish for entertaining is probably Paella... Get it just about ready, cover with foil and let it finish cooking and keep warm in the oven.

In the summer you can't beat a Salad Niçoise with lots of crusty bread and a chill white wine, eaten underneath dapple shade of a tree.

Tonypandy.

I want to master the art of pastry. Then I realise I just don't have the patience.

Current favourite with the tribe is crispy 5 spice chicken with a honey and sriracha dip.

Beef wellington isn’t as hard as people think, just time consuming but really impresses people

It’s such an easy winner. Make you look like a pro chef but most people can do a great one

I had my 1st attempt at making meringue at Christmas. I made a Cranacan pavlova. I had 6 egg yolks to use up after making that, so made some orange and lemon cookies with them.

Tonight some confit duck I made before Christmas, with dauphinoise potatoes. And to start just some sliced blood oranges with new season olive oil, salt & pepper.

Always hard to find the right balance of old favourites, new recipes that teach you something you didn't know, and the endless fun of trying to figure out how to put together the ingredients you happen to have to hand. Chawanmushi is top of my list for new things I want to learn; Japanese savoury custard. Had the most wonderful one at a restaurant flavoured with concentrated onion broth...the sort of dish that it makes one's troubles fade away to remember.

I was the cook in the house but finding it much more difficult now just cooking for myself. My main interest in recent years has been Middle Eastern food; now it tends to be very simple things but hoping to get a bit more motivated over time.

Lots of different stuff when I have the time. I like a lot of international cuisine and experiment with that. One of my favourites is Bouillabaisse (french fish soup) but lots of oqthers like paella, mousaka and pendang to name a few

Changed my approach to Carbonara recently and made such a difference.
