That would be because you accepted a friends invite. You can remove them from your friends list.

They don’t.

As has been said, that only happens if you accept a request not get a message.

They aren't in your friends list unless you accept them. I assume what they're sending you are requests to be in your friends list.

Everyone gets friend requests from random people I've never met nor spoken to, and in my case certainly they do automatically end up in a list of sorts, but not the friends list

You have to physically accept a friend request for someone to appear in your friend list.
