Aubergines

Nothing kinky so get your minds out the gutter.

Lidl had them reduced to 59p each so I bought 3.

Didn't realise I have 4 in the fridge already *facepalm*

So now, suggestions what to cook with them.

I was going to do a tomato and aubergine fried stew and set some aside to be frozen.

Maybe a Baba ghanouch as well.

So others have a better suggestion?

If you have any guinea pigs, they love to eat aubergines.

For humans, maybe lasagne with aubergine layers as well as pasta layers....

Brinjal curry.

With some chicken or other protein thrown in if, like me, you need some protein in a curry. Just make a big batch and portion what you don't eat into suitable containers and freeze. Aubergine is all mush once frozen anyway.
