How do you know if your mayo or salad cream or tomato ketchup and the like are still safe to eat if you can't remember how long ago you openened the bottle?

As a good rule of thumb, if it’s sprouting hairs on it, it’s probably best not to consume it….

Not sure about the other 2, but tomato ketchup is acidic so should be fine from opening till empty (as long as you're actually using it, and not something you only use once in a couple of years - in which case why did you buy it?)
