The best part of the chicken

On that subject what happens with all the skin off the skinless chicken breasts they sell? Wish you could buy a bag of skins and just throw in oven with salt pepper and olive oil on and roast till crispy surely it’s a better use than thrm getting thrown out of that’s what happens ?

This is the only time the kids happiness does not come first, if they so much as look at the skin they are grounded, they can eat it all they want when they learn to cook, until that point its all mine.

Very sharp fish knife, flatten skin side down on a chopping board, very carefully hold down one end and run your knife along to remove the wet fat inside.

Very hot heavy frying pan, plenty of salt and cracked black pepper,and if you like some finely chopped chilli,garlic,ginger.

A

When I roast a chicken, it goes breast side down in a tin with foil over the top. When the chicken comes out to rest, with some careful knife work, I peel the skin off, hopefully in one go.

That gets thrown onto a wire rack with some salt and stuck back in the oven. Comes out crispy, salty and awesome. Literally like chicken scratchings.

Sometimes, some even makes it onto the plates with dinner. Other times, it mysteriously disappears...
