Caprese does not usually have a red sauce though does often have fresh tomatoes, just olive oil and garlic sauce. The cheese for caprese is always buffalo mozzarella and the dough is usualy made without yeast. All with a caveat that there are plenty of variations of this, you asked

abruzzo Italy (and UK)

Firstly I prefer a red pizza to a white pizza (has tomato paste on), then mushrooms, Gorgonzola and Ventricina, which is a local Abruzzese Salumi, and Anchovies.
