The jelly. Omg that delicious salty jelly that turns into juice with the warmth of your mouth... its like a ready made pie with gravy inside! A pork pie isn't a pork pie without the jelly. FULL STOP! It seems that most manufacturers are shying away from the jelly these days. Without it, it's just dry pork meat in pastry. Which leads me to the pastry! Has to be a littlr greasy, not dry, with a crisp mouth feel... and then the meat - well seasoned, firm, and meat only - no fillers for this man... I love pork pies with a little mellow yellow American mustard smeared onto it

Not fussy on the ones from the butchers shops, they are near to the raw meat and flies and not even wrapped up, same with pasties etc, rather a supermarket one.
