I like salt and vinegar, maybe a little mayo

I usually make my own by part boiling the chips, drain, salt them then shake before frying

Mmmm, chips!

Depends what I'm having with them. If it's just chips then some salt & vinegar with freshly ground black pepper. Then depending what mood I'm in I may add tomato sauce or even curry sauce. If I'm feeling rather spicy I'll put some West Indian hot pepper sauce on!

At home I mostly make skin on wedges. Drizzle of oil, salt and pepper on a tray at top of the oven for 25mins at 200. Turn halfway through.

I don't know. I have never tasted some but if you like sweet with a hint of spicy, then you will enjoy it.

Nearly always a tangy and spicy tomato sauce. The Great British Sauce Company (Pretentious Nationalistic Twaddle-nonsense of a name, I know) used to make one called Habanero Tomato which was excellent. Sadly they seemed to go pop when Covid first came along.

McCain, in the air fryer with a teaspoon of goose fat and a dusting of crushed sea salt for exactly 22 minutes... Or the same but with Maris piper freshly cut and par boiled for 8 minutes before going into the air fryer.
