No need for the egg, just form it into a circle in the pan, but you must squeeze the water out of the potato's before. I use olive oil then a few nobs of butter around the edges, turn maybe once or twice.

you didn’t mention Plain flour.

Did you drain well enough before adding the egg?

Did you cook long enough before turning (~10mins per side)

Coarsely grate the potatoes (fluffy spuds are tge best here) and onion into a clean tea towel and then squeeze out the excess liquid by twisting the towel. Place the mix in a large bowl.

Add the egg, a good couple of pinches of salt and freshly ground black pepper, I add Paprika (spanish twist) . Mix the ingredients well. Shape,

Heavy skillet pan,

Good dept of oil,

Dont smoke the pan/oil,

Bobs your uncle OP Fannys your aunt.

From my cheffing days a lifetime ago it was a rosti...grated potato...rince well and squeezed as dry as possible..season and sliced onions if you want...pack into a medium hot pan and saute using olive oil and butter... cheapest healthiest way and super easy
