It is when done right. I had some athe the hunting club that tasted disgusting. The trick is to marinate it in milk.

I think when I've had it it's just been treated as normal game meat. It's really nice dried out as biltong. It may well depend on how old the bear is, how good the area it got culled in is for food and very importantly how it died and if it was bled out properly.
