I love sushi.

I went to the Tsukiji fish market in Tokyo years ago (think it’s the worlds biggest). You get up at 5am and go there - it’s amazing. Then you have a sushi breakfast at one of the outer stalls - you can’t get fresher!

Sashimi is lovely, but christ you got to be careful with it. They're having problems in Japan with the fish they use due to parasites.

I know what you mean about can’t get enough, especially if it’s good and served on ice etc I wake up next day feeling fish full almost sick, but craving it like a crack head

I’m eat it at Armani Hashi it’s the most amazing food experience , they import it fresh daily I think from that market or similar , so it’s maybe 10-12 hours old but apparently it’s still a massive difference from 3-4 hours old.

I can't stand the stuff.

But why, if fresh is better, do they not just have tanks of fish where tou pick your own?

Went to HK a few years ago and in one of the local restaurants they brought out a tray of live crayfish for our friends to select from.

Hard to do with steak, obviously, but surely perfectly possible with fish?

Yeah, it’s amazing. Literally was one of the best / most memorable meals in my life for the taste and setting.

I think the thing with fish is it needs to rest / cool before cooking and eating - plus a busy restaurant doesn’t want the hassle of gutting / descaling / filleting etc

That makes sense. I don't do seafood or raw fish - my body doesn't like it for some reason.

The idea of selecting your own food always reminds me of that scene in the Hitchhikers Guide with the ameglian major cow.

I suspect there'd be far more vegetarians and vegans if people actually got introduced to their dinner before eating it.

That makes sense. I don't do seafood or raw fish - my body doesn't like it for some reason.
