What's your favourite meat? Mines lamb. Not because I'm Welsh and therefore obviously have my wicked way with them, but because I don't eat it often enough, so when I do it's a real treat.

Beef, especially beef skirt it makes excellent gravy. I do have to think to myself "say skirt not curtains" before asking for it at our butchers.

Pork is an underrated roast. Cheap and delicious. You just have know how to cook it well. Salt it properly. Keep it moist with white wine. Get that crackling going with a little cider vinegar. Pair it with sage leaves and apples. Give it time to rest after roasting.
