It's not "I should of..." - it's "I should've...", which is a contraction of "I should have..."!

For example:

Remove the word "should" from the sentence, "I should have picked that up". You are left with, "I have picked that up", which is perfectly intelligible.

In this instance "have" is an irregular auxiliary verb, used in conjunction with "picked".

Now do the same with "I should of picked that up". You'll see that the sentence becomes "I of picked that up" - which doesn't make sense.

This drives me crazy, because it's so common in people's writing.
