Gateway to the Beacons

So for those cooking their loved one steak and chips please do the humble chip justice.

King Edward potato, peeled cut into thick chips, rinse well to remove starch.

Par boil in salted water for 7-8 minutes drain, dry and cool.

Deep fat fryer

BEEF DRIPPING OR GOOD LARD

Heat to 140c, and fry the blanched chips for 7-8 minutes until just lightly golden brown.

Drain and cool on a rack.

Heat the fat to 190c, fry cooled chips for 3-4 minutes until golden brown and crispy on the outside and light and fluffy inside.

Enjoy your chips you glorious bastards.

And no an air fryer does not do chips as well and no vegetable does not either.

Alternatively - Waitrose "No.1 Triple Cooked Chips", handsomely prepared in Aberdeen Angus beef dripping.

From freezer to plate in 3Ø minutes. —··—
