Gateway to the Beacons

What is or was on the lunch menu today

Mine is a simple cream of mushroom soup.

Saute mushrooms, garlic, pinch of thyme and a finely sliced potato in butter, add stock bring to the boil and simmer until the mushrooms and potato are soft, blitz and that's it done

the potato thickens and makes it creamy.

I had a mahoosive sausage sandwich for brunch, so I'll wait till afternoon cuppa and snacks
