"Roast duck, which I shall have on Christmas Day. I seldom do a roast when I am on my own, and duck is my favourite meat. Last year I was camping over Christmas and did not have a stove top oven at the time. Hence I had pan-fried duck leg instead, which was very nice. Tomorrow, I shall attempt to make a red peppercorn sauce to go with the duck, recipe given to me by a playmate. In case that does not go according to plan, I shall have my trusted tangy caramelised onions sauce on standby. Can't wait. " Sour cherry and red wine sauce goes great with duck. Half a jar of sour cherry conserve, half a bottle of red wine. Simmer to reduce and serve | |||

It was cooked in a bottle of Newccy Brown with various herbs/spices etc then transferred to a roasting tim and coated in a sticky glase of dijon mustard, muscovado sugar and clear honey. It looks so good I can't bring myself to cut into it to taste it lol | |||
