Xmas pud, it's not Xmas without it. Anything else can just be modified. We are having lamb rather than turkey this year

If I had my way (Scarlett) it would be my mum's white sauce. But as she wont be here it's brandy sauce for us

Roast duck, which I shall have on Christmas Day.

I seldom do a roast when I am on my own, and duck is my favourite meat.

Last year I was camping over Christmas and did not have a stove top oven at the time. Hence I had pan-fried duck leg instead, which was very nice.

Tomorrow, I shall attempt to make a red peppercorn sauce to go with the duck, recipe given to me by a playmate.

In case that does not go according to plan, I shall have my trusted tangy caramelised onions sauce on standby.

Can't wait.

Sour cherry and red wine sauce goes great with duck.

Half a jar of sour cherry conserve, half a bottle of red wine. Simmer to reduce and serve

The best part of Xmas dinner is the sage and onion stuffing with plenty of gravy and partial to pigs in blankets or cheese in blankets too.

Pigs in blankets are tasty. Ate a whole pack of 10 yesterday as part of dinner, shared with the pets, only the ends of the sausages without bacon though.

I've just finished ours. It was cooked in a bottle of Newccy Brown with various herbs/spices etc then transferred to a roasting tim and coated in a sticky glase of dijon mustard, muscovado sugar and clear honey. It looks so good I can't bring myself to cut into it to taste it lol

I used black current conserve and red wine the other week and it worked quite well.
