I do have an important question how do you know when duck is done...I mean it can't quack quack to tell me when its ready....

Duck is fine to be served pink, so I would not worry too much if it is slightly underdone.

In fact, I prefer it pink as it can be quite chewy if overcooked.

I normally go by 15min for each pound, plus another 15min on top.

We are having roast sirloin on the bone for Christmas day so will have lots of lovely beef dripping too.

My friend also likes me to keep some dripping for her to put in the stovies.
