The one I’ve done in the past the gets asked for again most often is Arancini. I did some bite size ones with a salmon and cream cheese filling and a small side salad. Everyone loved it

Black pudding stacks

Slice of black pudding rasher of bacon then black pudding again then bacon pop in oven for 20 mins and serve with sauce of choice

It was for me, I do risotto quite often anyway so I’ve got that bit down oat so to speak. Basically make a base risotto a day or two before and chill in fridge. Once cold roll I to little balls with your choice of filling in the middle and roll in breadcrumbs. On the day a quick dip I some hot oil or pop in very hot oven to crisp up and your done. You can vary the fillings for your own taste of course

I make mackerel pate!!! It’s so easy !

Just mix the fillets with crème fraiche, bit of horseradish and parsley. Serve with a bit of crusty bread & pickles

I make it posh on Christmas Day & do the melted butter on top x

Use Gu pudding dishes for the pate then pour a good melted butter over the top restaurant style - will look totally homemade

Salmon and cream cheese blini. Garnish with some dill/basil.

You can buy pre-made blinis and then just add the topping. Prepare them earlier and keep fresh in the fridge.

Toasted ciabatta with oven roasted cherry tomatoes and mozzarella and basil, can be cooked in the oven while your roasties are finishing off and pop the ciabatta in the toaster although Pate is probably the quickest and less stressful option
