I'm partial to liver and onions, kidneys too, but it seems offal is falling out of favour. Why so?

I'm having liver, bacon & onions for dinner tonight. It smells delicious simmering away on the hob.

I can't eat kidney though, not because of the taste, I just despise the way it squeaks on my teeth.
