Favourite Egg dish

Good morning,

I was lucky enough to have smoked salmon and scrambled eggs for my dinner last night, which was a real treat.

It led me to think of how much I generally like eggs as a food type.

I’d say my top 3 egg dishes are (in no particular order):

1. Eggs Benedict - rarely do this at home due to the faff of making the Hollandaise but it’s my go to if I’m having brunch out at a Carluccio’s or Cote

2. Fried egg sandwich - white bread and ketchup. That moment you bite into it and the yolk breaks is the cum shot of eggs. I never waste a drop…

3. Poached eggs on smashed avocado on toasted thick fancy bread (rye etc) - this seems a relatively new phenomenon but seems all the rage - the smashed avocado I mean, not the bread. Sometimes I’ll drizzle some siracha hot sauce over it to give it a kick.

This thread is so you can share the egg-citing things that you do with eggs, your favourite dishes and any egg based anecdotes…

Poached with avocado

Scrambled with smoked salmon

Kedgeree with soft boiled or smoked haddock with a poached egg.

Only one I don’t eat is a fried egg… I hate the frispy white bit

Sunnyside up on top of bubble.

For those putting avocado with your eggs. Until recently I would say shame on you. But I had a brunch in Spain brilliantly called eggs porn. Wow! So good my mate returned to on a recent business trip and dragged his client along with him.

Huevos Rancheros - eggs Mexican style

Poached eggs on Avocado on top of fresh uncut toasted bread

Spinach and Mushroom omelette

Fresh poached egg sandwich or soft bap with a little salt and pepper

These are my 4 favourite but eggs cooked any way really

Eggs Benedict is the most superior egg dish for sure. Although can't beat a bit of a local delicacy from my hometown Egg in a Cup (boiled egg, peeled and mashed up in a mug with a hefty amount of butter)
