The Town by The Cross

My meal was quick , easy n bloody tasty.

Wholemeal pitta , toasted, split, apread with hummus then filled with bistro salad, toms, onion, topped with home made curry flavoured falafel n drenched in mint flavoured yoghurt dressing ..... orgasmic.

Bring a pan of water to the boil and lower in the eggs. Reduce the heat to a simmer and leave large egg for 5 minutes if you fancy an egg for dipping.

I time mine from the moment I turn the heat on. That way is less arbitrary than deciding if it is boiling. 12 minutes with medium sized eggs. Give or take

On simmer and for large one but only 3.5 to 4 mins for smaller eggs. It all depends how runny you like it.
