It's getting chilly out there, which means my mind turns to soup!

What's your favourite soup? Any recipes for me?

My number one favourite is spinach and nutmeg. Delicious!

I am gonna say butternut squash, carrot and sweet potato (with chilli flakes obvs).

And also Jamaican red pea soup which I’m currently trying to find a good vegan recipe for because I miss it a great deal. I used to have this when it was cold or I was unwell and they are just such great memories of feeling better.

Too many to mention.

But Sweetcorn. Pea and mint. Carrot n coriander. French onion. Sweet potato. Are just a few that can be made quickly from the ingredients I probably already have.

I keep it really simple for soups.

Bbc good food is a great site. I don’t always religiously follow the recipes many have been tweaked over the years but great for ideas and for reminding me of baking proportions

I had a soup maker, but gave it away as it was too much faff to clean afterwards. I find a good pot and a stick blender works much better.

Just made a batch of lentil & bacon using the BBC good food recipe, so another vote for that site.

Nice thread idea. Coming from est europe there is no day without soup in my menu and being a chef is always home made ones. If i could i would love to share with you a variety of soups also i wouldn’t say no to a lady or couple from London not far from (NW) that want to invite me at their home let me cook for them and serve the food.

About What soup i like, there are so many. East european soup style and also big lover of cream soup.

My sister makes Carrot & Orange - personally I don’t like it, but you might. She made me a nice one last week that had chicken stock, lettuce, fennel, green split peas, onion and whatever else she had needing used up, and have to say it was nice! When cooked blend together.

I’ve ate little else besides soup in the last week and lost 4.5lbs

I use tomato, sweet potatoes, peppers & lentils to make soup from scratch. Sometimes I'll add carrots and 1 red onion to this aswell. Aubergines can work too.

Cook it in lots of water, using a bit of garlic and ginger & mizo paste & a small amount of salt. Towards the end, I'll add black pepper, lime & a tiny amount of chilli.

Yes please, I would love to know how you do it.

What I have done is:

In a heavy based soup pan, dry fry crushed chillies until they pop. Add a rough chopped onion and soften with a small knob of butter. Add the sweet potato & coconut milk. Bring to a simmer until the sweet potato softens. Then blitz the whole lot with a stick blender.

Serve with hot bread.

The best soup I ever had was a tomato and ham soup in a pub in York. Not just the flavours but also the texture. It was lovely and thick. And the freshly baked alm batch that came with it was lovely.

Oddly enough I just had soup for lunch. Got a pot of warming carot last night reduced to clear of 67p. It's gone down nicely.

I've been looking at recipes so i might get the stuff i need to make me some when i go shopping tomorrow, not sure what i'll get as different recipes say different ingredients.

Sweet potato with coconut milk and chilli is my fave!

Yes please, I would love to know how you do it.

What I have done is:

In a heavy based soup pan, dry fry crushed chillies until they pop. Add a rough chopped onion and soften with a small knob of butter. Add the sweet potato & coconut milk. Bring to a simmer until the sweet potato softens. Then blitz the whole lot with a stick blender.

Serve with hot bread. This sounds amazing! "

Recipe for anyone who wants it

Sweet Potato, Coconut & Chilli Soup

Ingredients

• 1 tablespoon coconut oil or veg oil

• 1 onion chopped

• 1-2 cloves garlic, crushed or finely chopped

• 2 large sweet potatoes peeled and cubed

• 1-2 chicken/veg stock cubes

• Salt and Black Pepper

• Crushed Chilli flakes

• I can of coconut milk

Method

• Heat oil in large soup pan

• Add onion and sauté until softened but not browned

• Add chopped garlic and stir

• Add sweet potato and cook for a few mins

• Cover completely with boiling water

• Add stock cubes, salt, pepper and chilli flakes to taste

• Stir well until combined

• Simmer for about 30mins until sweet potato is soft and cooked through

• Blend with a stick blender

• Add more salt/ pepper/ chilli flakes if needed

• Add thick part of coconut milk (discard

coconut water)

• Blend again until smooth

Because of the coconut milk, garlic and chilli giving a bit of an Asian flavour, I usually serve it with naan, roti or flatbread

I make a split pea and bacon soup.

500g of yellow split peas

1 pack of cooking bacon from Lidl (less any slices good for sandwiches)

Water - never measure, maybe 2 litres.

In the pressure cooker for 18 minutes at pressure then slow release.

Blitz then add salt to taste and extra water if needed.

Perfect winter soup.
