... eating the home-made spiced roasted giant peanuts, at this rate, there won't be any left for Christmas!

Anyone started to eat/drink their Christmas stash?

We already have one thread about having a mince pie while still in November.

;-)

I am really partial to Christmas pudding - usually with custard. I bought one about a month ago when they first appeared on the shelves meaning to have it. I have so far resisted but don't think it'll last another month.

I shall move on to making roasted cashews after the last batch of peanuts are done.

OK. My turn.

Tell us your recipe for home-made spiced roasted giant peanuts.

I'm not a fan of nuts so I probably won't appreciate but there are others here who will.

The orange and lemon slices I bought recently somehow got eaten... and the After Eights are looking very tempting right now.

The vodka and a few bottles of wine.

That's the downside of being organised and having everything bought by mid November

Just salt and Chinese Five Spice.

Soak the nuts in brine (strength dependent on taste/preference) with added Chinese Five Spice powder for a few hours.

Drain the nuts, spread on a roasting tray in a single layer.

Dry the nuts for about an hour at about 80-90 deg C (mine is a fan-assisted oven), shake occasionally to turn the nuts over.

The turn up the heat to 180 deg C and roast for 30min.

Remove from oven and allow to cool. Resist at all cost to eat the nuts as they come straight out of the oven, as they can still be slightly soft. Besides, they are very hot and can burn the tongue.

I prefer to eat with the skin on the peanuts myself. However, they can easily be removed by rubbing the nut between fingers once roasted.

Same recipe and method for cashews, however, the drying time may need to be increased to 1.5h due to the nuts being bigger.

It takes time and effort to make my own, however, it is less salty than shop-bought versions.

And I can't eat normal dry roasted peanuts ever since I got very d*unk - they did not mix well with G&T and Special Brew!
