I'm self employed and charge by the hour. But I like to start on the hour. Maybe a half past but preferably on an hour. So here I am, drinking my coffee, wasting 15 minutes of my life waiting for 8am so I can start doing the work that I could start doing now.

Anyone else do weird stuff like that?

When my OCD kicks in I have to turn the lights on and off 28 times hop on each leg for 7 times

Then do star jumps for 19 times whilst singing wonder wall by oasis in French

So don't worry OP your not weird at all

Do you get paid for the extra time? If not, why start early?

Try this:

Buy a cheap wristwatch or clock.

When you’re ready to start working, set the time to the top of the hour.

Watch the “work” time piece for breaks and finishing times.

This will shift all your “waiting” times to finishing time, when you can find lots more things to do with it.
