Leg of lamb, studded with garlic and rosemary, beauty of it can be blushing pink or falling off the bone, depends what else you are up to out if the kitchen.

Roasties, mint sauce (home made), and gravy.

Easy.

Had toast pork today.

Make sure you have the pork at room temperature, so take it out of the fridge a while before cooking.. rub a little salt into the skin 30 mins before cooking.. my crackling was perfect

Did stuffing balls with a small amount of chilli flakes.

Cauliflower, broccoli carrots kale and Roasties done in a goose fat and pork fat oil..

And yorkies and gravy .

Bloody lovely if I do say so myself ??

Gammon for us, buy a green (unsmoked) corner piece, unwrap it and soak it in vinegar water for a couple of hours in a cool place... put in a big saucepan, cover with fresh water, add a bit more vinegar and a sachet of mulling spices, and boil for an hour. Lift the froth off the top as it rises with a spoon and discard.

Transfer the boiled gammon to a roasting tin, score the fat with a sharp knife and apply whisky marmalade to it.

Put it in the oven to roast.

Peel potatoes and par boil them, heat the oil so that when you add the drained, seasoned spuds they start to sizzle as you put them in the oven.

Serve with seasonal veg, and parsley sauce.
