Crack into a hot pan with very little oil / butter (stops the egg white spreading out) keeps it in that fried egg neat oval shape

I thought this was another tits thread. Disappointed.

Frying pan, bit of oil, crack in the egg so it starts to heat gently as I don't like crispy brown bits at the edge. Salt now while it's still gelatinous.

As the egg starts to cook, I spoon the fat over the top, so it cooks the top of the egg and it's not snotty but you still get a nice luxurious yolk.

On sourdough toast with black pepper.

I use duck eggs as the yolk to white ratio is bigger. Cooked in the fat that's come off the bacon, and on a low heat. Hate crispy bits on an egg as I keep thinking it's bits of shell.

If it's eggs on their own, then poached preferably. On buttered crumpets so the yolk goes down the holes with the butter.

Thank me later.
