I might give an octopus risotto a go sometime. I had some grilled one and some in red wine before, both very nice. It's all in the cooking so it's neither slimmy or chewy.

Cooked in tomato sauce and lots of onions. With pasta or with rice. Or plain and drizzled with olive oil, some vinegar and sprinkled with dried oregano.
